Soup is good food but keep your spoon in your own bowl. Chilly winter nights have called for a nice warm bowl of soup. This carrot ginger soup with chile butter is a favorite of mine. I make it at least once a year and it’s always satisfying, not to mention there is a fair amount of ginger in it to ward off a killer cold. The ingredients are minimal and it’s a snap to cook up. As with any soup, its’ so much better the next day and the day after that. Do yourself a favor and make a batch of this soup… you can even freeze it for later but I doubt it will be around for too long. The compound butter imparts a richness and flavor boost so take my word for it and DO NOT skip this part of the recipe.
