Chilled Avocado Cucumber Soup

Here we are approaching fall and it sure doesn’t look or feel like it! Since it’s still been quite warm and baking is definitely out of the question, I am enjoying all things cold and refreshing. This is an easy to make chilled summer soup. All you really need are avocados, a serrano chile pepper, cucumber, and a squeeze of lime. Blend that up and voila! Lunch is served.

Very little ingredients means try to get the best you can because this soup’s flavors rely on the quality of your ingredients.

This is the perfect way to enjoy sitting out on the porch or overlooking balcony, lazily enjoying the flavors of creamy avocado and tangy lime garnished with a spicy radish and some soft cheese. Why can’t all days be like this?

Chilled Avocado Cucumber Soup:

3 ripe avocados, peeled and seeded

1 cucumber, peeled and seeded

1 serrano chile pepper cut in 1/2 lengthwise

juice of 1/2 lime

1 tsp sea salt

Place all ingredients in a blender or food processor. Depending on the strength of your blender, you may have to cut everything smaller to achieve a smooth consistency. Blend or process until completely smooth. The consistency will be like a loose sour cream.

Garnish:

radishes, thinly sliced

queso fresco, crumbled

cilantro sprigs

Place into glasses or small bowl of your choice, garnish and make it pretty. Cover and chill in the refrigerator for 30 min. Enjoy and savor the last days of summer!
