In a small town called Berastegui, not far from San Seb, there are rolling green hills, farms, and lots of sheep grazing the countryside. It’s another world. A quiet and peaceful place.
We were fortunate to have the opportunity to visit a wonderful artisan cheesemaker who was the 2010 Idiazabal gold medal winner. Arantxa makes three types of cheese: traditional Idiazabal, smoked, and aged. One taste of any of Larte’s cheeses and it’s clear that they are simply the best. Each flavor is fantastic, but my personal favorite was the smoked version.
