Summertime is officially here, like it or not. Warmer days mean I am in no rush whatsoever to turn on the oven. Just the thought of it makes me sweat. As much as I love a good berry tart, sorbet is the perfect answer to cooling down on warm summer days. I picked a mix of olallieberries and logan berries and the color turned out significantly lighter and more reddish than a straight olallieberry sorbet. This one was a little more tart which equals refreshing which is exactly what you want on a humid day.
Olallie- Logan Berry Sorbet:
4 cups mix of olallieberry and logan berry puree
2 cups cold water
2 cups simple syrup
juice of 1/2 lemon
Make sure all ingredients are cold. Everything can be prepped the night before and rested in the refrigerator overnight. Combine all ingredients and spin in an ice cream maker according to manufacture directions. Mine took between 30-35 minutes.
Transfer from ice cream maker to a freezer safe container and freeze for at least 2 hours, longer is possible.
