Blueberry Verbena Soda

Question: What do you do with a basket of blueberries forgotten in the fridge for  too long? You know the ones. The once plump and juicy berries that are now on the road to hell. It happens. I have a solution. Make blueberry syrup. It’s fast and easy.

 

Throw all 4 ingredients in a heavy bottom pot. Cook, strain, and cool.

The syrup is so good, you will probably want to lick the bowl.

Voila! The answer to a hot summer day without turning on the oven.

 

Blueberry Verbena Syrup:

yields a scant 2 cups

1 1/2 cups fresh blueberries

5 fresh  lemon verbena leaves

1 cup sugar

1/2 cup water

Put all ingredients in a pot. Bring to a boil. It will bubble up, so make sure to stir gently and turn the heat down to medium. Smash the berries with a metal masher. Cook the mixture for 2 minutes. Strain and cool.

 

Blueberry Verbena Soda:

1 serving

5 tablespoons blueberry verbena syrup

1 can club soda

lemon wedge

a few small lemon verbena leaves

Place the syrup in a glass, fill with ice cubes, lemon wedge, verbena leaves, and top with club soda.
