Long Beans in Black Bean Sauce

I like to eat a late dinner. Problem is, a late dinner turns into late dessert and ultimately, a late night. Not so good for having to wake up early the next morning. What can I say, some things taste far better later at night. After dinner, while watching tv, after 9pm… all the things I crave:

chocolate

chocolate and caramel

donuts

coffee

Halloween candy

chocolate ice cream cones

cinnamon rolls

cookies

brownies

almost anything with SUGAR

Sadly, since sleeping in until noon is not an option, the above tasty treats are pretty much off limits. But I eat them anyways.

These beans are good for you and won’t keep you up all night on a sugar high. They’re also super quick to pull together. Ideal for a week night when I’m just too exhausted to make a big mess and spend lots of time in the kitchen.

 

Long Beans in Black Bean Sauce:

Bunch of long beans, sliced into 1″ pieces

1 Purple bell pepper, sliced

5 Dried red peppers (chile arbol or similar)

Olive oil

1tsp Sesame oil

Garlic

1 tablespoon black bean sauce

Salt

Pepper

 

Saute the dried pepper in olive oil. When the pepper turns dark and has some black spots, add the chopped long beans and sesame oil. Saute until the beans blister slightly and add the purple bell pepper. Cook on medium heat until the bell pepper softens a bit, but still retains some crunch. Add garlic, cook 1 minute and add black bean sauce, salt and pepper. Stir and cook 1 minute more. Serve with brown rice.
