Kale is one of the vegetables that is new to me- in a way. I always knew of it, tried it in restaurants, but never prepared it myself. Not sure why. Until now. I decided to start off easy and make some kale chips. This proved to be a good trial for a beginner such as myself. Now, I’m completely hooked on these crisps and don’t feel guilty after finishing off an entire batch.
Purchase some lacinato kale and make sure it is hearty and not wilted or soft. Wash and pat dry. Remove the tough core by folding the leaves in half and peeling back to tear out the core. Place on a parchment lined sheet pan.
Rub the kale pieces with olive oil, sprinkle with salt, and place in a pre-heated 350 degree oven. Bake in a single layer for 15 minutes or until crisp. When crisp but not burned, remove from the oven and sprinkle with lemon zest and sumac. Serve immediately.
