I had an entire list of sweet and savory goodness I was planning on cooking up this week. Know what happens when you kinda but not really have it all planned out? The kinda part was the grocery list versus what actually came out of the grocery bags once home. Add to that non stop rain and wind and you bet I was not leaving the house at the last minute to grab a few items. I was sure something good would eventually come of that now defunct list of treats that deflated faster than a souffle out of the oven.
Upon a lightning fast survey of the fridge, I had the basics and apricot jam. Jam! This was like striking gold. A jam tart would be fitting for some rainy day baking. I used this recipe and found it to be easy and fuss free. Two things I love. And, this thing can be made ahead, frozen, and pulled out to bake at a moments notice should you have unexpected visitors or a brunch on the fly. Now if I could only get organized and squeeze a few more hours out of the day to actually prep some or one in advance, that would be a miracle.
